Gluten-free Day

Well, the boys are off from school today for no apparent reason. I know that there are icy roads and maybe even sleet out there somewhere in Houston, but it doesn’t look like we got any of it. So they will be working on their Valentine’s box and bag for next week. And of course, they’ll be catching up on their favorite video games.

I decided to do a little experimenting with gluten-free ingredients, and have so far made gluten-free granola with walnuts and dried cranberries (it got a trifle over-baked, but it’s still edible), and some gluten-free dough a la Healthy Bread in Five Minutes a Day. I’m hoping the dough can be used to create a tasty pizza crust tonight for dinner. I’m also wondering if it might be easier (and tastier) to buy a bread machine and use pre-made mixes. We shall see…

Gluten free is pretty tough, at least in the beginning. You should see me in the grocery store examining product labels, paging through my printouts and store listings of gluten free products. And then gasping at the prices.  Obviously it’s going to take some getting used to.
